步驟 Instructions

  1. 00:11 奶酪糊製作:

240g奶油奶酪 | 40g糖 | 20g青檸汁 | 200g淡奶油
240g cream cheese | 40g sugar | 20g lime juice | 200g whipping cream
打發至濃稠酸奶狀
Beat until thick and yogurt-like.

  1. 00:21吉利丁融化:

50g溫牛奶 | 10g泡軟的吉利丁片
50g warm milk | 10g softened gelatine sheet
攪拌至吉利丁片融化
Stir until the gelatine sheet dissolves.
倒入奶酪糊中攪拌均勻
Pour into the cheese mixture and mix well.
擠入模具中
Pour into the mold.
冷凍3-4小時
Freeze for 3-4 hours.

  1. 00:30 青檸果凍層製作:

250g溫水 | 30g糖 | 青檸片適量
250g warm water | 30g sugar | lime slices
攪拌均勻浸泡一會
Stir and let soak for a while.
撈出青檸片
Remove the lime slices.
加入8g泡軟的吉利丁片
Add 8g softened gelatine sheet.
攪拌至吉利丁片融化
Stir until the gelatine sheet dissolves.
擦一點青檸皮屑
Grate a bit of lime zest.

  1. 00:40 組裝慕斯蛋糕:

倒入脫模的芝士慕斯中
Pour over the unmolded cheesecake mousse.
冷藏2小時至凝固
Refrigerate for 2 hours until set.
裝飾一下即可
Decorate as desired and enjoy.
